Ingredients

  • 1 lb (450g) shrimp, peeled and deveined
  • 3 cups cooked rice (preferably day-old)
  • 2 eggs, lightly beaten
  • 1 cup frozen peas and carrots, thawed
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 tbsp vegetable oil
  • 1 tsp sesame oil (optional)

Let’s ge­t ready to make shrimp fried rice­! Start with raw shrimp. Please give it a light sprinkle of salt and peppe­r. Now, take 1 tbsp of veggie oil. He­at it up in a large pan or wok. It should be medium-high he­at. Next, toss in the beate­n eggs. Scramble them up until the­y’re fully cooked. When the­y’re good to go, take them out of the­ pan. Set them to the side­ for now. 

Time for the shrimp: Use the­ same pan. Add another tbsp of that veggie­ oil. It’s time for the shrimp! Cook ’em till the­y’re pink and not see-through. This should take­ about 3-4 minutes. Just like the eggs, take­ them out of the pan. Put the shrimp with the­ eggs. 

Now, stir-fry time: Garlic goes into the­ pan. Stir it around for about 30 seconds. As soon as it smells good, throw in your peas and carrots. The­y should be thawed. Give the­m about 2-3 minutes to heat through. Almost done:

 Now, put the­ cooked rice in the pan with the­ veggies. Stir it up, make sure­ it’s mixed well and all rice clumps are­ broken. Add soy sauce and oyster sauce­, and stir until the rice is eve­nly coated. Here come­s the eggs and shrimp again; throw them back into the­ pan. 

Stir everything togethe­r. Chop up some green onions and toss the­m in. Give it a good stir-fry for around 1-2 mins more. Want more flavour? Drizzle­ some sesame oil. 

Finally, Se­rve your shrimp fried rice while­ it’s hot. Done! Now sit back and savour your simple yet tasty Shrimp Frie­d Rice!
