Ingredients
- 1 lb (450g) shrimp, peeled and deveined
- 3 cups cooked rice (preferably day-old)
- 2 eggs, lightly beaten
- 1 cup frozen peas and carrots, thawed
- 3 green onions, chopped
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 2 tbsp vegetable oil
- 1 tsp sesame oil (optional)
Let’s get ready to make shrimp fried rice! Start with raw shrimp. Please give it a light sprinkle of salt and pepper. Now, take 1 tbsp of veggie oil. Heat it up in a large pan or wok. It should be medium-high heat. Next, toss in the beaten eggs. Scramble them up until they’re fully cooked. When they’re good to go, take them out of the pan. Set them to the side for now.
Time for the shrimp: Use the same pan. Add another tbsp of that veggie oil. It’s time for the shrimp! Cook ’em till they’re pink and not see-through. This should take about 3-4 minutes. Just like the eggs, take them out of the pan. Put the shrimp with the eggs.
Now, stir-fry time: Garlic goes into the pan. Stir it around for about 30 seconds. As soon as it smells good, throw in your peas and carrots. They should be thawed. Give them about 2-3 minutes to heat through. Almost done:
Now, put the cooked rice in the pan with the veggies. Stir it up, make sure it’s mixed well and all rice clumps are broken. Add soy sauce and oyster sauce, and stir until the rice is evenly coated. Here comes the eggs and shrimp again; throw them back into the pan.
Stir everything together. Chop up some green onions and toss them in. Give it a good stir-fry for around 1-2 mins more. Want more flavour? Drizzle some sesame oil.
